Caesar Salad Dressing

2 Eggs

2 Cloves garlic, minced

2 tbsp lemon juice

2 tbsp red wine vinegar (I’ve used various kinds of vinegar depending what I have on hand.  I lessen it for more astringent types)

1 tbsp Dijon mustard (I’ve used just ordinary)

1/2 tsp salt

1/4 tsp pepper

1/2 tsp Worcestershire sauce (I’ve done without)

3/4 cup Olive oil.

1/4 cup Parmesan cheese (can be omitted)

Carefully slip eggs into boiling water for exactly 1 minute.  Remove and crack immediately into glass measuring cup. Add remaining ingredients and whisk together thoroughly.

  1. so... what does the half cooked egg do? I've never heard of that! Sounds yummy though. Usually I just wing Caesar dressing based on half a dozen different recipes. Nice to have another one to add to the mix. :)

    Tried a chocolate last night. I can see where the word ecstasy came from. mmmmmmm

  2. I think the eggs help give it a thicker consistency and also contribute to the flavor. Glad you like the PC!!
